The Process

Historically, sherry casks were old ex-solera casks or transportation butts used to ship sherry from Spain to Scotland. Today, true Sherry Casks—certified by the Consejo Regulador—can be either original very old bodega casks with clear traceability or newly made oak casks that have completed the sherry seasoning process in Jerez bodegas. Distilleries now prefer these latter sherry-seasoned casks for their superior qualities and consistent supply. This process requires keeping the cask full of authentic sherry wine for at least 12 months under strict supervision of the Sherry Council.

Sherry Council Quality Control

The Regulatory Council of Jerez protects the “sherry” trademark, including sherry casks. They ensure certification by verifying the wines and fill levels upon cask filling in the bodega, with ongoing audits throughout the seasoning process. At completion, each cask from the certified batch receives a unique “Sherry Cask” certificate, guaranteeing full compliance with Council rules and authentic sherry seasoning.

We collaborate closely with seven bodegas – six in Jerez and one in Sanlúcar – to offer diverse seasoning options. These partnerships provide access to an extensive range of authentic sherry wines: Oloroso, Pedro Ximénez, Cream, Amontillado, Medium, plus rarer styles like Fino, Palo Cortado, and Manzanilla. Each sherry type interacts uniquely with the oak, imparting distinctive aromas and flavours to create exceptional spirits profiles. All seasoning takes place, of course, under Sherry Council supervision.
